Few changes have been made to the Central Grocery’s Muffuletta since its creation by Lupo Salvadore – a Sicilian immigrant – in 1906. Lupo combined the ingredients of a Sicilian working man’s lunch – meats, cheeses and olives – on a single loaf of Italian bread and sold it to French Market workers.
Buy a muffuletta from the same counter that served the original one in 1906. Expect the following served cold and pilled high on a 10” round loaf of Italian bread cut horizontally: mortadella, capicola, salami, both emmental and provolone cheese, covered in marinated olive salad. Lunchtime lines are long so consider going early or after the rush.
How you order defines your NOLA Knowledge. Muffs are usually cut into quarters and ordered either whole, half or as a single quarter. Unlike the po-boy, there are no condiment options – you can’t order it ‘dressed.’ Ordering a muffuletta is easy – just say, ‘Gimme a ½ a muff.’
